Cran-Apple Relish
4 cups fresh cranberries
2 oranges-unpeeled(quarter, remove seeds)
2 apples(cored and unpared)
1 lemon-unpeeled(quartered, remove seeds)
2 1/2 cups sugar
Put cranberries & apples through food grinder, using medium blade. Put oranges & lemon through food grinder, using medium blade. Add to cranberries with sugar;blend. Refrigerate several hours.
Makes 3 pints
Caesar Salad Dressing
2 cups salad oil
3 egg yolks(uncooked)
3 celery ribs, chopped
1 med. onion, chopped
1/4 cup white wine vinegar
1/4 cup Dusseldorf-style mustard
1 Tbsp. monosodium glutamate(accent)
2 garlic cloves
1 Tsp. salt
1/2 Tsp. pepper
5 or 6 drops Tabasco
1 tube anchovy paste<(optional, but try it)
Place all ingredients in blender until blended and creamy. Serve on salad greens with croutons and grated Parmesan cheese.
Dixie Pepper Relish
12 red sweet peppers, finely chopped
12 green sweet peppers, finely chopped
6 large onions, finely chopped
3 Tbsp. mustard seed
2 Tbsp. celery seed
3 cups sugar
1 1/2 pints vinegar
3 Tbsp. salt
Chop red and green peppers finely, working in the onion throughout. Cover with boiling water and let stand 10 min. then drain. Cover again and bring to a boil; drain again. Now add mustard seed, celery seed, sugar, vinegar and salt. Brint to a boil and boil fo 15 min. Jar while hot, and seal.
Makes 10 pints
Poppy Seed Dressing
Great on fruit salads.
1 Tsp. dry mustard
1 Tsp. onion, finely grated
1 Tsp. salt
1/2 cup honey
5 Tbsp. vinegar, divided
1 cup salad oil
poppy seeds
Combine mustard, onion, salt, honey and two of the Tbsp. of vinegar in small bowl of electric mixer. Beat well, and add oil, a little at a time, beating constantly. When all oil has been added and mixture is thick, add as many poppy seeds as desired, and the remaining three Tbsp. vinegar. Store in covered jar in refrigerator.
Yields about 2 cups
