Caesar Salad

1/2 large head lettuce torn into pieces
1/2 medium romaine, also torn
1/4 cup lemon juice
1 clove garlic, crushed
1 Tsp. worcestershire sauce
1/2 Tsp. salt
1 cup toasted bread cubes
2 tomatoes
1/4 cup parmesan cheese, grated
1/4 cup salad oil
1 egg-beaten
1/4 Tsp. pepper
1/4 cup blue cheese
Combine garlic and oil; let stand 30 min. Combine lettuce, romaine & cheese. Strain oil & garlic mixture. combine oil, lemon juice & worcestershire sauce; mix well. Add blue to this mixture & soften. Pour over salad. Add beaten egg. toss until egg disappears. Add bread cubes, slat & pepper.

Water Gate Salad

1 package pistachio pudding
1/2 cup coconut
2 cups minature marshmallows
1 can crushed pineapple with juice
1 large cool whip
1/2 cup nuts
Mix, pour into large dish and let set until firm in refrigerator.

Best Ever Jello Salad

"very rich, could be used as dessert"
1 package lime jello
1 package cream cheese (small)
1 cup crused pineapple
1 cup chopped nuts
2 cups small marshmallows
2 cups boiling water
1 cup whipped cream
Stir cheese, marshmallows and jello into boiling water until dissolved. Chill until mixture starts to thicken. Add cream, pineapple and nuts. Chill until firm.

Cottage Cheese Pineapple Salad

2 envelopes unflavored gelatin
Juice of 1 lemon
1/4 cup to 1/2 cup sugar(to taste)
1 can crushed pineapple with juice
1 LB cottage cheese
1 small carton cool whip or 1 pkg dream whip
Soften gelatin in small amount of water, add about 1/2 cup boiling water to dissolve, add lemon juice, sugar & pineapple, chill until thickened. Mix cottage cheese & whipped topping & add to pineapple mixture, chill until firm.

Blueberry Salad

1 family size black cherry jello
1 can wild blueberries
1 can crushed pineapple
1 8 oz. package cream cheese
1/2 pint sour cream
1/2 cup sugar
1/2 cup nuts
Drain blueberries and pineapple. Save the liquid. Bring one cup of liquid and one cup of water to boil. Dissolve jello. Add 2 cups cold water. Let congeal slightly, then add blueberries and pineapple and let congeal completely. Mix sour cream, cream cheese & sugar together. Spread over Jello. Sprinkle with nuts.

Congealed Salad

1 can crushed pineapple(lg)
6 oz. package strwberry jello
30 large marshmallows
8 oz. package cream cheese
1/2 cup mayonaise
1 can carnation milk(chill and whip)
1/4 cup chopped pecans
Combine pineapple juice and jello in boiler. Bring to boil over medium heat. Add marshmallows and melt. Add cream cheese, cool, then add whipped carnation, mayonaise, nuts and pineapple. Pour into large dish, chill until firm, cut in squares and serve.

One cup Salad

1 cup drained pineapple
1 cup coconut
1 cup sour cream
1 cup mandarin oranges
1 cup marshmallows
Combine the above ingredients. Refrigerate for a few hours or overnight to blend flavors.

Jell-O Salad

2 packages mixed fruit Jello
1 container cottage cheese
1 can pineapple, crushed, drained
3 cups water (2 cups warm, 1 cup cold)
1 cup coconut
1 cup nuts, chopped
Let jello set lightly then put cottage cheese in first, then add rest of ingredients. Refrigerate.

Summer Fruit Salad

1 cantaloupe, peeled & cut in 3/4 inch cubes
1 20 oz. can pineapple chunks, undrained
1 unpeeled apple, cubed
2 peaches, peeled & cut in wedges
2 bananas, peeled & cut in 1/4 inch slices
1 cup strawberries, halved
1 6 oz. can frozen orange juice concentrate, thawed & undiluted
Mix the above ingredients. Spoon orange juice concentrate on top. Cover & chill 6-8 hours. yields 8-10 servings

Sauerkraut Salad

1 large can sauerkraut, well-drained
At least 6 Stalks celery
1 small onion or flakes
1 green pepper
1 red pepper or pimiento
1 cup vinegar(or sweet pickle juice & omit sugar)
1 cup Water
1 Tbsp. cinnamon
1 cup suger
1/2 Tsp. cloves
Mix vegetables. Mix rest of ingredients; pour over vegetables. Refrigerate at least 2 days.

Sweet Potato Salad

1 small container cool whip
1 Tsp. cinnamon
1 cup marshmallows
1/2 cup brown sugar
1/2 Tsp. nutmeg
1 30 oz. can sweet potatoes
Mix juice from potatoes, nutmeg, cinnamon, brown sugar & cool whip together. Cut potatoes into bite-size chunks. Fold potatoes & marshmallows into cool whip mixture. Chill.

Three-Bean Salad

1 LB can cut green beans, drained
1 LB can cut wax beans, drained
1 LB can kidney beans, drained
Combine; add 1/2 cup each chopped celery, onion and green pepper. Combine 1/2 cup sugar, 2/3 cups vinegar, and 1/3 cups salad oil; pour over vegetables. Add 1 Tsp. salt & 1/4 Tsp. pepper; toss. Chill overnight. Before serving, toss to coat; drain.

Three-Bean Salad

1 can green beans
1 can kidney beans
(raw) onion rings
3/4 cup sugar
2/3 cup wine vinegar
1/2 cup olive oil
1 can yellow wax beans
chopped celery
sliced bell peppers
Mix sugar, wine vinegar and olive oil and Pour over raw vegetables and marinate overnight.

Raspberry-Pineapple Gelatin Salad

2 packages raspberry jello(3 oz.)
2 cups boiling water
2 packages frozen raspberries(small)
1 20 oz. can crushed pineapple
1 pint sour cream
2 large ripe bananas, mashed
Dissolve jello in hot water. Add raspberries with juice. Add undrained pineapple & bananas. Pour half of mixture into 8 x 12 inch pan. Chill until set. Keep rest at room temp. Spread sour cream over set jello. Spoon remaining mixture over the sour cream and chill until set. Serves 8-10

Gelatin Salad

1 large package jello
4 cups hot water
1 can pineapple or fruit cocktail
1 small jar marshmallow cream
2 Tsp. mustard
4 Tbsp. Mayonaise
1 8 oz. package cream cheese
Mix cheese, mayonaise, mustard, Add fruit. Melt marshmallow in hot jello, add cheese mixture to jello. Refregerate.

Waldorf Chicken Salad

2 cups cooked white chicken meat
1 cup diced celery
1 1/2 cups diced apple
juice of 1 lemon
1 cup seedless white grapes(halved)
1 cup walnut pieces (chopped)
1/2 cup mayo
1/2 cup sour cream
salt & white pepper to taste
Dice apple and toss with lemon juice. Mix apples, celery, grapes, nuts and chicken. Blend together mayo and sour cream, salt & white pepper. Arrange on lettuce cups Serves 6 generous portions
