Baked Steak

1 sirloin, 2" thick with long bone
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic salt
4 Tbsp. ketchup
4 Tbsp worcestershire sauce
3 Tbsp butter, in pats
Trim fat off meat, then season with salt, pepper and garlic salt heavily on both sides. Place steak in shallow baking dish or pan and spread ketchup, then worcestershire sauce over top side of meat. Now, arrange pats of butter on top of steak and place in oven. Do not cover or turn steak over. Bake at 425º for 30-35 min. (medium done) serves 5

Barbecue Beef Burgers

1 onion, diced, oil for onion
1 can (8oz) tomato sauce
1 sauce can water
3 tbsp. vinegar
2 tbsp. worcestershire sauce
1 tsp. salt
1 tsp. paprika
1 tsp. chili powder
1/2 tsp. pepper
1/4 tsp. cinnamon
2 tbsp. brown sugar
3 lbs pot roast
2 whole carrots
Brown onion in a little oil, and add all but roast and carrots to saucepan. Cook over med. heat until thickens into sauce, about 20 min. Simmer pot roast with a little salt, pepper, and garlic salt on top of stove until it falls apart, about three hours; include carrots for last hour of cooking. Shred cooked meat, mash carrots and pour hot sauce over meat to serve. Serves 8-10

Walnut Chicken

5 Tbsp. Crisco Oil (divided)
5 Tpsp. soy sauce (divided)
3 Tpsp. cornstarch (divided)
2 whole boneless chicken breasts, skinned & cut into 1" pieces
1/2 cup chicken broth
1/2 Tsp. ground ginger
1/2 Tsp. dried red pepper
1 med. onion (cut into 1" pieces)
1 clove of garlic (minced)
1/2 LB. BROCCOLI (cut into 1" pieces)
1 red bell pepper (cut into 1" pieces)-optional
1/2 cup chopped walnuts
Hot cooked rice
Mix 1 Tbs. Crisco oil, 2 Tsp. soy sauce and 1 Tsp. cornstarch in small bowl. Stir in chicken to coat. cover and refrigerate 30 min. Meanwhile, mix chicken broth, ginger, remaining 3 Tsp. soy sauce and 2 Tsp. cornstarch. Set aside. Heat remaining Crisco oil in large skillet. STir fry refrigerated chicken mixture and dried red pepper over med. high heat till chicken is no longer pink. Remove chicken from skillet. Stir fry onion, garlic and red bell pepper in skellet until onion is tender. Add broccoli, stir fry until tender. Add chicken and broth. Cook, stirring constantly, until thickened. Stir in walnuts. .Serve with rice. Serves 4

Pork Chops with Tomato Gravy & Rice

1 large can tomatoes
1 small onion
6 strips bacon
1 cup water
Rice
Pork Chops
1 can of spanish style tomato sauce(optional)
Dice onion, cut bacon in 1 inch pieces. Put in frying pan and fry until brown. Cut up can of tomatoes and add to bacon and onion. Now add either the cup of water or the 15 oz. can of tomato sauce(your preference). Bring to a boil and turn fire down to low. Cook about 30 min. Prepare rice and brown in vegetable oil. Serve tomato gravy on the rice with the pork chops along side.

Family Quiche

1 baked 9" pie shell
3 cups swiss cheese, grated
1 cup green chilies, chopped, with juice
3 eggs
1 cup half & half
salt, pepper & pinch of herbs
Grate cheese into baked pie shell. Put rest of ingredients in blender until well mixed;pour over cheese in pie shell. Bake at 350º for 40 min. or until knife comes out clean. Serves 8-10
