Oatmeal Cookies
1 cup shortening
3/4 cup firmly packed brown sugar
3/4 cup granulated sugar
1 Tsp. vanilla
1 Tsp. salt
3 1/4 cups oats(any brand)
1 egg
1/4 cup water
1 cup flour
1/2 Tsp. baking soda
1/2 Tsp. cinnamon
cream shortening in large bowl, add sugars gradully, beating until well blended. Beat in egg, vanilla & water. Stir in remaining ingredients & drop by Tsp. onto well greased cookie sheets. Bake at 350º until golden, about 15 min.
Makes 5 dozen
Health cookies
2 cups brown sugar(or raw sugar)
1 cup corn oil
2 eggs
3 cups sunflower seed flour(health food store)
2 cups regular rolled oats
1 cup unbleached flour
1 Tbsp. cinnamon
1 scant Tsp. nutmeg
1 Tsp. salt
2 Tsp. baking powder
1 Tsp. soda
1 cup coconut
1 cup nuts, chopped
Put sugar, corn oil and eggs in bowl and beat well. Blend sunflower flour, rolled oats, unbleached flour, cinnamon, nutmeg, salt, baking powder, soda. Add gradually to egg mixture and work together well(it will be stiff). Add coconut and nuts. Drop by spoonfuls on ungreased cookie sheet. Press with bottom of glass covered with sugar. Bake 10-12 min. at 350º.
Makes four dozen thin, chewy cookies
Old World German Butter Cookies
2 sticks butter, softened
1 cup powdered sugar
1 cup sugar
2 eggs
1 cup salad oil
1/4 Tsp. salt
2 Tsp. soda
2 Tsp. cream of tartar
2 Tsp. vanilla
4 3/4 cups flour
Cream butter and sugars together. Add eggs, oil and gradually add in dry ingredients. Roll dough into marble-sized balls and flatten on cookie sheet with a glass which has been buttered and dipped in sugar. A crystal glass makes a pretty design. Bake at 350º for about 10 min, until slightly brown.
Makes 4-6 dozen, depending on size.
Swedish Butter Cookies
"best to double or triple recipe-they go quickly"
1/2 cup butter, softened
2 hard-boiled egg yolks, pushed through sieve
1/2 Tsp. vanilla
1/4 cup sugar
1 cup flour
Cream butter, sugar, eggs. Add and blend vanilla and flour. Force through cookie press. These are expecially pretty at christmas time when made as flowers with red and green candied cherries in center. Bake at 350º for 10-12 min.
Christmas Cookies
1 lb light brown sugar
1 lb butter
3 eggs
1 Tsp. baking soda
1 Tsp. vanilla extract
3 Tbsp. milk
5 cups flour
1 lb white raisins
1 lb chopped nuts
1 lb candied cherries
1 lb candied pineapple
1 can coconut
Sift 3 cups flour and baking soda, set aside. Mix 2 cups flour with raisins, chopped nuts, cherries and pineapple thouroughly. Cream sugar and eggs. Mix alternately with milk and 3 cups flour. Fold in fruit mixture. Add vanilla and coconut. Place 1 rounded Tbsp full on greased cookie sheet about 2 inches apart. bake at 350º for 15 to 20 min. Do not over bake.
