Hushpuppies

3/4 cup cornmeal
1/4 cup flour
1 1/2 Tsp. baking powder(or self rising meal)
1/2 Tsp. salt
1 Tbsp. onion flakes
1/4 Tsp. garlic powder
1/2 to 1 egg in measuring cup, slightly beaten
Add water to cup to make 3/4 cup liquid.
Blend dry ingredients. Add liquids until well-mixed. let set 10 min. Drop by spoonfuls into deep hot cooking oil. Cook until brown on both sides.

The Best Banana-Nut Roll

1/2 cup butter or marg. softened
2 cups sugar
1 1/2Tsp. baking soda
1 1/2 cup mashed, ripe bananas(about 3)
1 cup chopped pecans
2 eggs
2 cups all purpose flour
1/4 tsp. salt
1/4 cup & tbs. buttermilk
1 tsp. vanilla extract
Cream butter and sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time beating well. Combine flour, soda and salt. Add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Stir in remaining ingredients. Spoon into 3 greased and floured 1 LB coffee cans. Bake at 350º for 55 min. or until a wooden pick inserted into center comes out clean. Cool in cans for 10 min. Remove loaves to wire reack and cool completely.

English Muffin Loaves

2 packages dry yeast
6 cups unsifted flour
1 Tbs. sugar
1/4 Tbs. soda
2 cups milk
1/2 cup water
2 Tsp. salt
cornmeal
Combine 3 cups flour, yeast, sugar, salt and soda. Heat liquids until very warm(120-130º). Add to dry mixture and beat well. Stir in rest of flour to make a stiff batter. Spoon into 2 8 1/2 X 4 1/2 pans that have been greased and sprinkled with cornmeal. Cover. Let rise in warm place for 45 min. Bake at 400º for 25 min. Remove from pans immediately and cool.

Banana Bread

2 2/3 cups sifted self rising flour
1/2 cup (1 stick) margerine
1 Cup sugar
3 eggs
2 med. size ripe bananas(mashed)
3/4 cup finely chopped pecans or walnuts
2 Tsp. grated orange rind
Grease loaf pan & line bottom with waxed paper. Cream margarine with sugar until fluffy. Beat in eggs, one at a time until fluffy again. Stir in flour alternately with mashed bananas. Fold in nuts & orange rind. Pour into prepared pan. Bake in slow oven 325º for 1 hour and 20 min. or until golden brown and a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 min. Loosen around edges and turn out onto rack. Peel off waxed paper.

Pumkin Bread

3/4 cup sugar
1/4 cup cooking oil
1 egg(beaten)
1/4 cup water
1/3 cup canned (unsweetened pumpkin)
1/2 Tsp. baking soda
1 cup all purpose flour
1/2 Tsp. salt
1/4 Tsp Cinnamon
1/4 Tsp. nutmeg
1/4 Tsp. ginger
Marachino Cherries- red & green(reserve 3 whole red & 1 green for garnish) 1/2 cup nuts(optional)
Measure sugar into 1 Quart mixing bowl. Combine oil, egg, water, pumpkin and soda in 2 cup bowl; then blend into sugar. Sift together flour, salt & spices in measuring cup. Quickly add to liquid mixture & blend well. Chop cherries and add with nuts to mixture. Pour into greased loaf pan 2 1/4,3 1/2,7 1/2. Bake in preheated oven at 350º for about 15 min. Remove form oven and garnish, top with whole red cherries. Cut 1 green cherry in half to resemble leaves. Return to oven another 15 min. or until center springs back when pressed with finger.
