Summer Fruit Salad
1 cantaloupe, peeled & cut in 3/4 inch cubes
1 20 oz. can pineapple chunks, undrained
1 unpeeled apple, cubed
2 peaches, peeled & cut in wedges
2 bananas, peeled & cut in 1/4 inch slices
1 cup strawberries, halved
1 6 oz. can frozen orange juice concentrate, thawed & undiluted
Mix the above ingredients. Spoon orange juice concentrate on top. Cover & chill 6-8 hours. yields 8-10 servings
Porcupine Meatballs
1 can tomato soup
1 lb. ground beef
1/3 cup uncooked rice
1/4 cup chopped onion
1 Tsp. chili powder
1 Tsp. salt
dash of pepper
Combine meat, rice, onions, water, salt & pepper. Shape into 1" balls. Blend soup & chili powder. Stir in 1/2 cup water, bring to boil. Add meatballs. Cover & simmer 1 hour, stirring a few times.
Easy Chicken Divan
2 10 oz. packages frozen broccoli, or 2 bunches fresh
2 cups sliced cooked chicken, or 3 chicken breasts cooked & boned
2 cans condensed cream of chicken soup
1 cup mayonaise or salad dressing
1 Tsp. lemon juice
1/2 Tsp. curry powder, or mustard
1/2 cup shredded sharp cheese
1/2 cup soft bread crumbs
1 Tbsp. butter or oleo, melted
Cook broccoli in boiling salted water till crisp-tender; drain. Arrange stalks in greased 11 1/2 X 7 1/2 X 1 1/2" baking dish. Place chicken on top. Combine soup, mayonaise, lemon juice & curry powder; pour over chicken. Sprinkle with cheese. Combine crumbs & butter; sprinkle over all. cover & bake at 350º 25-30 min.(until thoroughly heated). Trim with pimiento strips. serves 6-8
Grandma's Divinity
2 cups sugar
1/2 cup hot water
1/2 cup white karo
1 Tsp. vanilla extract
1/4 Tsp. cream of tartar
1/4 Tsp. salt
2 egg whites(stiffly beaten)
Place sugar, cream of tarar, hot water, karo and salt in sauce pan. boil until spins a thread. Pour into stiffly beaten egg whites. Mix quickly, stir in vanilla. Pour into buttered platter. Cool, cut and serve. Optional(nuts or fruit could be added before pouring into platter).
Peanut Butter Fudge
2 cups sugar
1 cup milk
1/2 cup peanut butter
1 Tsp. vanilla
2 Tbsp. butter
Bring sugar & milk to a rolling boil and boil for about 20 min. until it comes to the soft ball stage.(drop a small amount of syrup into a glass of cold water. A soft ball will form on the bottom) Remove from heat and cool for 5 min. Add peanut butter, vanilla & butter and beat until candy looses its gloss. Pour into buttered dish and let set.
